How to Make Steak Fried Rice

Ensure all your ingredients are chopped, sliced, and ready to go.

Heat a large skillet or wok over high heat. Then add a tablespoon of vegetable oil. Chop leftover steak into small pieces then sear them for 1-2 minutes per side until heated through. Remove the steak from the pan and set it aside.

In the same pan, add a bit more oil if needed. Stir-fry the minced garlic and mixed vegetables until they are tender-crisp.

Add the chilled cooked rice to the pan. Break up any clumps and stir-fry with the veggies until everything is well combined.

Push the rice and vegetables to one side of the pan. Then pour the beaten eggs into the empty space and scramble them until cooked through. Once the scrambled eggs are cooked, mix them with the rice and vegetables.

Drizzle soy sauce, oyster sauce, and sesame oil over the rice mixture. Stir well to combine.

Add the leftover steak slices and chopped green onions to the pan. Stir everything together until the steak is evenly distributed and the green onions are mixed in.

Taste the fried rice and adjust the seasoning with salt and pepper if needed for great flavor. Keep stir-frying for a few additional minutes until everything heats through.

Hint: Having everything prepared in advance will make the cooking process smooth. This recipe is quick so have everything ready to go and within arm's reach.

Substitutions

  • Steak - Flank steak is another option.
  • Sauce - Instead of oyster sauce or fish sauce, you can use hoisin sauce.
  • Protein - You can use this recipe to make shrimp fried rice, chicken fried rice, or beef fried rice.

Variations

  • Ginger - Add ginger powder or grate fresh ginger for a pop of zesty flavor with peppery undertones.
  • Rice - This recipe works with any type of leftover rice including brown rice or jasmine rice; just make sure it's day old.
  • Spicy - Kick the spiciness up a notch by adding sriracha.
  • Garnish - Sesame seeds add a toasted nutty flavor.
  • Veggies - Frozen veggies work best for a meal that's ready in less than 30 minutes but you can use fresh vegetables if that's what you have.

Equipment

Working with a wok is fun, but you can also achieve the same results with a large skillet. Whichever you use, make sure the pan has enough surface area to shift the ingredients.

Storage

Yes, this recipe for leftover steak can be stored for later! Store leftover steak fried rice in an airtight container in the fridge for up to 4 days. For longer storage, freeze it for up to 1 month and thaw it overnight in the fridge before reheating. Reheat it in the microwave or in the skillet over medium-high heat.

Top Tip for the Best Steak Fried Rice

Always use cold cooked rice when making steak fried rice. The cold rice grains have less moisture than fresh rice so they are less likely to clump up or become soggy. Instead, you get toasted rice with a deep savory flavor and the perfect texture.

FAQ

What is the secret to good fried rice?

Make the best steak fried rice with day old rice. The lack of moisture allows it to warm up without getting soggy or clumping up.

How do you reheat steak without making it tough?

The key to reheating steak is to cook it just until warmed through. Add it to an already hot pan so it warms up quicker. Then allow it to rest briefly before serving for optimal flavor and tenderness. Some recipes use baking soda or baking powder but it isn't necessary when you use this method.

How long is leftover steak good for in the fridge?

When properly stored, leftover steak can last 3-4 days. It's important to refrigerate it promptly and use airtight containers to maintain freshness. Consider freezing it for an extended shelf life so you can use it in recipes for leftover steak.
