How to Cook Flat Iron Steak:
Marinade Flat Iron Steak
Add clean steaks to a large Ziploc bag, or container with a lid. Then add the steak marinade ingredients into the Ziploc bag, including the: avocado oil, soy sauce, juice of the orange and lemon, minced garlic, thyme, rosemary, and black pepper.
Remove as much air from the bag as possible and close it tight. Then gently massage the seasonings and juices into the steak by turning the bag over in your hands.
Once the marinade is coating each piece of steak, place the bag in the refrigerator for at least one hour, but preferably overnight.
Cook Flat Iron Steaks
Remove the steaks from the refrigerator at least 20 minutes before cooking so that they can come up to room temperature.
Heat a large cast iron skillet over medium-high heat. Once it is hot enough, (after about 2-3 minutes), drizzle in the oil.
Remove the steaks from the marinade and place them in the hot skillet in one single layer. Use a pair of tongs to press the steak into the skillet.
Cook the steaks for 5-7 minutes on each side, depending on your desired doneness.
Once both sides have been seared, remove the flat iron steaks from the skillet. Place them on a cutting board and allow them to rest for 7-10 minutes before serving. This allows the juices to settle so that the steak is not overly dry when cutting.
IMPORTANT: When it is time to serve the steak, be sure to cut it against the grain. You can see the fine lines in the steak after it is cooked, you need to cut in the opposite direction of these lines so that your steak is tender when eating!
What if I don't have flat iron steak?
If you do not have flat iron steak and want to make this recipe, try using flank steak or skirt steak instead. Both are comparable cuts of steak.
Flank steak is just as thick and tastes very similar. Skirt steak has a bolder flavor and a chewy texture.
Pro-Tips:
- Ensure the pan is super hot before adding the steak.
- Sear both sides of the steak by pressing both sides of the filets onto the very hot surface of the cast iron skillet. This method creates a flavorful crust on the steak while keeping the inside tender and juicy.
- Do not move the steak around. Aside from flipping once, do not touch the steak as it cooks.
- Cook to your desired level of doneness. The CDC recommends cooking whole cuts of beef to an internal temperature of 145°F. Use a meat thermometer to check.
- Allow the steak to rest for at least 5 minutes after it is cooked. This allows the meat juices to redistribute so the steak does not dry out. If you immediately slice the steak, you will lose moisture.
- Slice against the grain to keep the texture tender.
Storing and Reheating:
Store leftover flat iron steak in an airtight container in the fridge for up to 3 days. The best way to reheat flat iron steak is to place it in the oven at 300°F for about 10 minutes, to slowly rehat and retain its juices.
