Ingredients

  • 2 tablespoons Vegetable oil for cooking
  • 1 lb Leftover sirloin or ribeye steak thinly sliced
  • 3 cups Cooked and chilled rice best if made a day ahead
  • 2 cups Mixed vegetables carrots, peas, corn, and diced bell peppers
  • 3 Green onions chopped
  • 3 cloves Garlic minced
  • 2 Eggs beaten
  • Salt and pepper to taste

Fried Rice Sauce

  • 3 tablespoons Soy sauce
  • 1 tablespoon Oyster sauce or fish sauce
  • 1 teaspoon Sesame oil
  • 1/2 tablespoon Brown sugar optional but recommended

Instructions

  • 1. Prep Ingredients: Ensure all your ingredients are chopped, sliced, and ready to go. Having everything prepared in advance will make the cooking process smooth.
  • 2. Cook the Steak: Heat a large skillet or wok over high heat. Add a tablespoon of vegetable oil. Sear the sliced steak for 1-2 minutes per side until heated through. Remove the steak from the pan and set it aside.
  • 3. Cook Vegetables: In the same pan, add a bit more oil if needed. Stir-fry the minced garlic and mixed vegetables until they are tender-crisp.
  • 4. Add Rice: Add the chilled cooked rice to the pan. Break up any clumps and stir-fry with the vegetables until well combined.
  • 5. Push Rice to the Side: Push the rice and vegetables to one side of the pan, creating an empty space. Pour the beaten eggs into the empty space and scramble them until cooked through.
  • 6. Combine Ingredients: Once the eggs are cooked, mix them with the rice and vegetables.
  • 7. Add Soy Sauce and Oyster Sauce: Mix the soy sauce, oyster sauce, sesame oil, and brown sugar in a bowl. Then drizzle the sauce over the rice mixture. Stir well to combine.
  • 8. Add Steak and Green Onions: Add the cooked steak slices and chopped green onions to the pan. Stir everything together until the steak is evenly distributed and the green onions are mixed in.
  • 9. Season and Serve: Taste the fried rice and adjust the seasoning with salt and pepper if needed. Continue to stir-fry for a few more minutes until everything is heated through.
  • 10. Serve Hot: Transfer the steak fried rice to a serving dish and serve hot and enjoy!

Notes

If you are using raw steak, be sure to cook it for 2-3 minutes prior to adding it to the fried rice mixture.
You can use freshly made rice, but it may have a "stickier" consistency.
