These easy toffee cookies are always a hit! If you don't have the time to make a traditional cookie recipe, this great recipe takes less than 10 minutes of oven time. It's the best cookie when you need something quick.

Some may recognize these toffee cookies with saltines as "Christmas Crack" because it's so addicting. But it's so simple to make that we enjoy it around. This toffee cookie recipe is salty, sweet, and indulgent.

Ingredients for Saltine Toffee Cookies

This saltine cracker toffee is made with just a handful of simple ingredients. Salty crackers are a solid foundation for caramel, toffee, and nuts. Save the homemade toffee for another recipe because we like quick and easy over here!

How to Make Toffee Cookies

Preheat the oven to 350°F. Line a sheet pan with parchment paper. Then add the saltine crackers in one single layer to the prepared baking sheet.

Melt the butter in a saucepan over medium heat.

Once the butter is melted, add the brown sugar, stir the sugar into the butter until it is completely dissolved.

Allow the butter mixture to simmer and come to a light boil. Stir occasionally so that the caramel mixture does not stick to the saucepan.

Pour the caramel mixture over the crackers and spread it out evenly using a spatula. Then sprinkle the chopped pecans and toffee pieces all over the crackers.

Place the baking sheet in the oven and bake for eight minutes. Remove the butter toffee cookies from the oven and allow them to cool down. Finally, break them apart and enjoy your saltine toffee cookies!

Hint: If you're making this in advance, let them set at room temperature then chill them in the fridge for at least 2 hours to firm up. Then break them into bite-sized pieces to serve.

Substitutions & Variations

  • Milk Chocolate - Sprinkle chocolate chips over the final product and let it melt for about 5 minutes. Use a rubber spatula to ensure each piece is evenly coated with the melted chocolate chunks.
  • Nuts - You can swap the pecans for chopped walnuts, almonds, or pistachios.
  • Toppings - Customize the saltine cracker toffee with various toppings, including crushed candy canes, pretzels, or M&M's.

Equipment

  • 16 Saltine crackers
  • 1 stick Butter unsalted
  • 1 cup Brown sugar
  • 1 teaspoon Vanilla extract
  • 1 cup Chopped pecans
  • ½ cup Toffee bits

Instructions
