I can’t think of a better crowd-pleaser for the Super Bowl or family gatherings than these buffalo chicken sliders. They take everything you love about Frank's buffalo chicken dip, like tangy, zesty buffalo flavor and creamy, cheesy goodness, and pack it into bite-sized slider buns that are perfect for parties.

These buffalo chicken rolls are so shareable and easy to make that they’ve become my go-to recipe whenever I need something everyone will love. They’re a hit with my family, and I can guarantee your guests will be asking for the recipe after just one bite!

Ingredients

  • Chicken: Use rotisserie chicken for convenience or leftover shredded chicken.
  • Cream cheese: Softened to create a creamy base.
  • Ranch dressing: Adds tangy flavor and creaminess.
  • Mayonnaise: Enhances the richness of the filling.
  • Blue cheese: This adds a tangy depth of flavor. Skip if you’re not a fan.
  • Buffalo wing sauce: Frank’s RedHot gives the buffalo chicken dip the perfect balance of heat and flavor.
  • Shredded mozzarella cheese: Melts beautifully and adds gooey texture; reserve some for topping.
  • Shredded cheddar cheese: Adds sharpness and depth to the cheesy mix.
  • King's Hawaiian rolls: The sweetness of the rolls complements the spicy buffalo sauce. They're also the perfect size for snacking.
  • Butter: Melted and used for a rich garlic butter glaze.
  • Garlic: Minced to infuse the butter with bold flavor.

How to Make Buffalo Chicken Sliders

Prep the Oven and Rolls

I start by preheating my oven to 350°F and lining a baking sheet with parchment paper. Then, I grab the Hawaiian rolls and carefully cut a hole in the top of each roll. I make sure the hole is deep enough to stuff the filling but not all the way through the bread.

Make the Buffalo Chicken Filling

In a large bowl, I combine the cheeses, chicken, ranch dressing, blue cheese (if using), and Buffalo wing sauce. I mix everything until it’s smooth and well combined. (Reserve ½ cup of mozzarella for later.)

Stuff the Rolls

Using a spoon, I fill each hollowed-out roll with the Buffalo chicken mixture, making sure to pack them generously. Once all the rolls are stuffed, I melt butter in the microwave with minced garlic and parsley, then brush it all over the tops and sides of the rolls.

Bake and Garnish

Before baking, I sprinkle the reserved mozzarella cheese over the rolls for a cheesy topping.

Then, I bake the rolls for 10–15 minutes until the cheese is golden brown and bubbling.

Once out of the oven, I garnish the buffalo chicken sliders with hot honey, parsley, or red pepper flakes and serve with ranch or extra Buffalo sauce on the side.

Ingredients

  • 2 cups Chicken cooked and shredded
  • 4 ounces Cream cheese room temperature
  • ¼ cup Ranch dressing
  • ¼ cup Mayonnaise
  • ¼ Blue cheese optional but recommended
  • ½ cup Buffalo wing sauce Frank’s RedHot is the best
  • 1 ½ cups Shredded mozzarella cheese reserve ½ cup for topping
  • 1 cup Shredded cheddar cheese
  • 1 pack Hawaiian rolls
  • ½ stick Butter
  • 1 tablespoon Garlic minced
  • ½ tablespoon Parsley chopped (sub ¼ teaspoon dried parsley)
  • Garnish: chopped green onions chopped parsley, drizzle of hot honey, red pepper flakes, more ranch dressing or blue cheese for dipping

Instructions

  • Preheat your oven to 350°F and line a baking sheet with parchment paper.
  • Add the cream cheese, ranch dressing, blue cheese dressing, and Buffalo wing sauce to a large bowl. Stir until smooth and well combined.
  • Now add the shredded chicken into the bowl and gently mix it into the sauce, careful not to overmix it and break the chicken up too much. Then add in the shredded cheeses to the bowl and stir everything together until it is combined.
  • Place the Hawaiian rolls on the baking sheet, use a knife to cut a hole in the top of each roll, make sure that the hole is deep enough to stuff the buffalo dip into it, but do not cut all the way through the bread.
  • Add the butter, minced garlic, and chopped parsley to a bowl and place it in the microwave for 30 seconds until the butter is melted.
  • Use a spoon and spoon the buffalo chicken dip mixture into each of the Hawaiian rolls until you don’t have any more of the mixture remaining. Now brush the garlic butter all over the sides of the rolls, and in between the middle of the bread as well.
  • Sprinkle the remaining mozzarella cheese cheese over the top of the buffalo dip rolls. Place the baking sheet in the oven and cook the sliders for about 10-15 minutes until the cheese is golden brown and bubbly.
  • Remove from the oven and drizzle with hot honey (optional but HIGHLY recommended), garnish with chopped parsley, serve with a side of Frank’s buffalo sauce or ranch dressing for dipping, and enjoy!
