What is au jus sauce?
Au jus sauce is a broth that consists of pan drippings from a roast. Despite comparisons, au jus is not gravy. Au jus is a light sauce whereas gravy is thickened by flour.
"Au jus" is a French term that means "with juice." In French cuisine, it is a way to naturally enhance the flavor of a dish. It is typically served with a French dip sandwich. Hence my decision to pair roast beef sliders with au jus!
Ingredients you need:
Roast Beef Sliders
- Deli rolls: Hawaiian rolls are the best because they come stuck together. Aside from that, they are super soft and the sweetness complements the savory flavor of the other ingredients.
- Mayonnaise: This is an optional inclusion but I do recommend slathering the bread with some kind of condiment. Take your pick!
- Roast beef deli meat: Get it thinly sliced. You can go with whatever's on sale but I highly suggest Boar's Head brand.
- Cheese: I used slices of provolone cheese and shredded mozzarella cheese.
- French dip au jus mix: I used the Pioneer brand Au Jus Gravy Mix because it's easy to prepare and makes the perfect dipping sauce.
Garlic Butter Topping:
- Butter
- Garlic: Use minced.
- Everything but the bagel seasoning: This is a crunchy, roasted blend of sesame seeds (white and black), poppy seeds, dried garlic & onion, and sea salt flakes.
Instructions to make Roast Beef Sliders:
Slice the Rolls
Preheat the oven to 375°F.
Use a knife to cut the rolls down the middle so that you end up with a top and bottom half of the bread. The individual rolls on the bottom half should still be connected, and the individual rolls on the top half should still be connected.
Assemble the Roast Beef Sliders
Place the bottom half of the bread into a 9x13 baking dish. Spread the mayonnaise out evenly over the rolls.
Then sprinkle the shredded mozzarella cheese over the mayonnaise, and try to cover the entire surface of the bread.
Next, layer the roast beef deli meat directly over the layer of mayonnaise (if you don’t choose to use the mayonnaise, just simply place the roast beef on the bottom layer of bread). Fold the meat over itself instead of laying it flat.
Now place the slices of provolone cheese on top of the roast beef in one single layer. It is okay if some of the cheese overlaps.
Prepare the Garlic Butter Topping
Add the butter, minced garlic, and everything but the bagel seasoning into a small bowl and microwave on high for 15 second increments, until the butter is completely melted.
Prepare the Au Jus Dipping Sauce
Make the au jus dipping sauce according to the packet instructions. Which usually just calls for mixing it with water and heating it in a saucepan or microwave.
Bake the Roast Beef Sliders
Gently place the top half of the Hawaiian rolls on top of the sliders. Brush the melted butter mixture over the top of the rolls. Then cover the dish with foil and bake the sliders for 8 minutes.
Remove the foil and bake them uncovered for an additional 2 minutes.
Finally, take them out of the oven and serve them with the Au Jus dipping sauce.
Alternatives and Variations:
Bread: Other dinner rolls you can use include Brioche rolls and pretzel rolls. Regardless of the kind you use, just make sure they're soft.
Sauce: Add an aioli, dijon mustard, spicy brown mustard, Worcestershire sauce, or horseradish sauce.
Meat: Not into deli roast beef? Swap it out for sliced prime rib, chicken, ham, or turkey instead. Leftover turkey from Thanksgiving would be a perfect swap!
Cheese: You can use any cheese slices you'd like. Just make sure it melts well. Swiss cheese, pepper jack, and sharp white cheddar are good substitutions.
Toppings: I kept this recipe simple so everyone could enjoy it but feel free to add toppings like caramelized onions or pickles.
Seasoning: Enhance the flavors by adding garlic powder and onion powder.
Pro-Tips:
- Prevent soggy sliders by making sure the rolls are sliced evenly between the top and bottom layers. You can also lightly toast the bottom half before assembling them.
- These can get a bit messy. Insert a toothpick in the center of each sandwich for easier serving.
- Save even more time by assembling the sandwiches ahead of time and refrigerating them until you're ready to serve. Apply the garlic butter just before popping them in the oven.
Storing and Reheating:
Wrap leftover roast beef sliders in aluminum foil and store in the fridge for up to 3 days.
Alternatively, you can store them in the freezer for up to 2 months. I recommend letting them thaw in the fridge overnight before reheating them in the oven or air fryer.
