First of all, almost any and every chicken sandwich is a winner in my book. Secondly, slap some bbq sauce on that thing- and babbby!!
So the inspiration behind these particular sandwiches came from a pulled pork sandwich I had awhile back. Instead of pork though, I wanted chicken!
Having made them NUMEROUS times, I decided to doctor em’ up and share them with you! Let’s go on the journey as to how they are made...
Gather the ingredients for the Slow Cooker BBQ Chicken Sandwiches:
Make life easy, and grab everything you need before you start!
- Chicken breast
- Barbecue sauce
- Water
- Garlic powder
- Onion powder
- Seasoned salt
- Black pepper
- Shredded cheese
- Brioche rolls
- Mayo
- Pickles, onions, jalapeños- to garnish or top
What kind of chicken to use:
For this particular recipe I used chicken breast. Of course any piece of chicken can be used though. Ensure that the bones are removed if there are any.
Another idea to make things even easier- get a store bought rotisserie chicken. Bring it home and shred it up! Add BBQ sauce to it and heat it in a pan on the stove, or oven.
Slow cooker method for the chicken:
Defrost and clean the chicken. Season liberally with the seasoned salt, onion powder, garlic powder, and black pepper.
Spraying the slow cooker with non-stick spray, or using the slow cooker liners is highly recommended! Now place the chicken in it.
Pour the BBQ sauce all over the chicken, and add ¼ water. Stir it around a bit to ensure it’s coated evenly.
Set the slow cooker to high for 2-3 hours, or low for 6 hours. Chicken is done when it’s fork tender, and shreds easy.
Use two forks to shred the chicken as fine as possible. Of course your hands will work for this step too! It will be super tender at this point.
How to make the fork tender chicken in the oven?
Set the oven to 350°. After seasoning the chicken, pour the bbq sauce over it. Then place the chicken in an oven safe baking dish, and cover tightly with foil.
Bake the chicken for one hour, uncover and back an additional 30 minutes. If the sauce gets too thick, add ¼-1 cup of water and stir it in.
Remove the chicken from the oven and shred it with two forks. Add more bbq sauce if you feel it needs more.
Assemble the sandwiches:
Toasting the brioche bun is highly recommended! It not only warms the bread, it gives it a nice toasty bite.
Simply melt about a tablespoon of butter in a non-stick skillet, and add the bread. Flip it after a minute and toast the other side.
Scoop about ¼ cup of the bbq chicken to one side of the bun. Sprinkle a handful of shredded cheese on top. Smear a dollop on mayo on the other side.
Serve the sandwiches with optional toppings. Popular toppings for this sandwich are: pickles, sliced onions, and jalapeños.
What to serve with the BBQ Chicken Sandwiches:
Potato chips are always a great option! A simple green side salad. Macaroni and cheese is usually a hit with any and everything!
Another great side dish, or topping for all things BBQ is coleslaw. Super simple to whip-up, or buy the kit from the store

Ingredients
- 3 Chicken breast boneless skinless
- 1 ½ tablespoon Seasoned salt
- ½ tablespoon Black pepper
- ½ tablespoon Garlic powder
- ½ tablespoon Onion powder
- 2 cups Barbecue sauce favorite brand
- ½ cup Water if needed
Sandwich Assembly
- 6 Brioche rolls
- 1 cup Mayo
- 2 cups Cheese shredded
- Optional toppings: pickles onions, jalapenos, coleslaw
Instructions
- Place the chicken breast in the slow cooker. Season liberally with the seasoned salt, black pepper, garlic powder, and onion powder. Be sure to coat both sides of each chicken breast evenly with seasoning.
- Mix the barbecue sauce and water together in a separate bowl. Pour the mixture over the chicken. Place lid on and set to high for 4 hours, or low for 5-6 hours.
- Once the chicken is ready, shred it apart using two forks. Lightly toast the brioche rolls if desired. Spread about 1 tablespoon of mayo on each roll.
- Next, spoon ¼ cup of the bbq chicken mixture on top, and sprinkle a handful of cheddar cheese over it.
- Optional toppings can be placed on the sandwiches when serving.
