Since "they" say breakfast is the most important meal of the day, why not partake in this meat lover's breakfast sandwich? It is a great way to start your day. Loaded with plenty of protein, and a few veggies thrown in for good measure!
No seriously though, this is an awesome spin on the classic BLT, like this one from Serious Eats. . We took it up a few notches by adding the scrambled eggs and smoked sausage!
What if I do not like smoked sausage?
The great thing about breakfast sandwiches are that you can get as creative, or be as boring as you'd like. There is not a right or wrong way to enjoy a good breakfast sandwich. However, this meat lovers breakfast sandwich is the way to go if you're looking for a breakfast that can hold you over until lunch, if not dinner!
Making the meat lover's breakfast sandwich is a cinch!
- First, I always suggest you rinse any veggies that you are planning on eating. Farm to table is awesome, but most of our store bought veggies are touched by MANY hands before we consume them! So wash the tomato and romaine lettuce first. Then cut the tomato into thin slices, about 4-6 slices, depending on how much you love tomato! Toast the whole wheat bread to your desired level of doneness.
- Cut smoked sausage lengthwise so that it will lay flat in a skillet. Place smoked sausage and bacon in the skillet and fry until they are fully cooked, about 5-7 mins. per side. Once they are fully cooked, remove them and set aside on paper towels or baking rack to drain excess grease.
- Scramble the eggs in a bowl, and pour them into a nonstick skillet over medium heat. Add the pepper, and continue stirring eggs so that they do not burn. Eggs are done when they are no longer runny and have a light yellow, fluffy appearance.
- Remove the eggs from the skillet and place them on a plate and immediately place the slices of cheese on them so it can begin to melt.
- Slather one side of each piece of toast with about 1 tablespoon of mayonnaise (or more if mayo is your thing)! Begin layering scrambled eggs, bacon, smoked sausage, tomatoes, and lettuce.
- Close the sandwich and cut in half if desired- this step is highly recommended because it can get messy!
Take big bites, grab a fork to eat the "fall out" and enjoy your glorious day!

- 4 slices Whole wheat bread toasted
- 6 slices Bacon fried
- 2 pieces Smoked sausage cut in half lengthwise
- 3 eggs Scrambled
- 4-5 pieces Sliced cheddar cheese
- 1 Tomato slices thin
- 4 leaves Romaine lettuce
- 8. ½ cup Mayonnaise
- ¼ teaspoon Black pepper
