Ingredients

Sausage pancakes take just a few simple ingredients. Use your favorite breakfast sausage (Jimmy Dean is a popular choice) and pancake mix. Shredded cheddar cheese makes it more mouthwatering and you absolutely need some maple syrup for dunking or drizzling.

Hint: Make sure you cook the sausage completely until no pink is visible. The pancakes cook for just 10 minutes which wouldn’t be enough time to cook raw sausage.

Storage

Once the bites have cooled down to room temperature, store them in an airtight container in the fridge for up to 4 days. For longer storage, store them in Ziploc bag in the freezer for up to 2 months.

You can reheat them in the microwave or air fryer.

Yes! Once cooled completely, store them in a freezer-safe bag for up to 3 months. Reheat in the microwave for 30–45 seconds or in the air fryer for a crispier texture.

Absolutely! These are one of my favorite make-ahead breakfast recipes because they stay fresh in the refrigerator for up to 4 days and reheat beautifully.

Yes! Homemade pancake batter works just as well as boxed mix. Just make sure it’s a thick pancake batter so the sausage stays evenly distributed.

Pancake and Sausage Bites

Pancake and Sausage Bites are mini pancakes baked with savory sausage crumbles, maple syrup, and shredded cheese. This easy breakfast for the family is ready in just 30 minutes!

Ingredients

  • 1 pound breakfast sausage
  • 2 cups pancake mix
  • 1 1/2 cup water
  • 1 cup shredded cheese
  • 1/4 cup maple syrup

Instructions

  1. Preheat your oven to 400°F.
  2. Add your breakfast sausage to a skillet and cook it over medium heat. Use a spatula to crumble the sausage up as it cooks. Cook it through until there is no more pink left, about 10 minutes.
  3. Once the breakfast sausage is cooked through, remove it from the skillet and set it to the side.
  4. Now combine your pancake mix and water in a bowl and mix it well, careful not to over mix. Next, add in the cooked sausage, shredded cheese, and maple syrup, and fold them in with a spoon until they are just combined.
  5. Spoon about a tablespoon of the sausage pancake mixture into each spot of a mini muffin pan. Then bake the pancake bites for about 10-15 minutes, or until they are golden brown and cooked through.
  6. Continue the baking process until all of the batter is used. This should make about 48 mini sausage pancake bites. Serve with a side of maple syrup, and enjoy!
