Sausage pancakes take just a few simple ingredients. Use your favorite breakfast sausage (Jimmy Dean is a popular choice) and pancake mix. Shredded cheddar cheese makes it more mouthwatering and you absolutely need some maple syrup for dunking or drizzling.

Instructions
Preheat your oven to 400°F.
Cook breakfast sausage in a hot skillet over medium heat. Crumble the sausage with a spatula as it cooks. This takes about 10 minutes.
Once the breakfast sausage is cooked through (no pink), remove it from the skillet and set it to the side.
Then combine your pancake mix and water in a bowl. Mix well but do not overmix.
Next, add in the cooked sausage, shredded cheese, and maple syrup, and fold them in with a spoon until they are just combined.
Spoon about a tablespoon of the sausage pancake mixture into each spot of a mini muffin pan.
Then bake the pancake bites for about 10-15 minutes, until golden brown and cooked through.
Continue the baking process until all of the batter is used. This should make about 48 mini sausage pancake bites. Serve with a side of maple syrup, and enjoy!
Hint: Make sure you cook the sausage completely until no pink is visible. The pancakes cook for just 10 minutes which wouldn't be enough time to cook raw sausage.
