It’s packed with crisp cabbage and savory meat, giving you all the fillings of a deconstructed egg roll without the fried wrapper. Whether I need a quick side or a hearty entree, this one-pan meal is perfect for busy weeknights since it’s ready in just 30 minutes.

I love that it’s low carb, and you can eat it hot or cold, so it’s super versatile. Plus, it reheats well, so I can enjoy the leftovers for lunch the next day. It’s a healthy alternative that still hits all the comforting flavors of a traditional egg roll!

Ingredients

  • Ground Beef: Ground pork is traditionally used in egg rolls but I used ground beef in order to make it a bit healthier.
  • Carrots: Shred this veggie before cooking. It adds colors and a nice crunch.
  • Cabbage: Use a premade coleslaw mix for an even quicker meal.
  • Three Pepper Blend: This is my personal addition for added spice, flavor and color.
  • Hoison Sauce: This thick, sweet and salty sauce brings all the other flavors together.
  • Seasoning: Use ground garlic (or fresh garlic, minced), grated fresh ginger (ground ginger in a pinch), black pepper and crushed red pepper flakes.
  • Sesame Seeds: I use this to garnish.

How to Make Egg Roll in a Bowl

See recipe card for ingredient quantities and full instructions.

First I cook the ground beef and frozen pepper trio. Once cooked through, I drain the excess grease and add the meat back to the skillet.

Then, I add thinly sliced cabbage and carrots to the same skillet.

I cook cabbage down until it is soft and appears almost translucent. You’ll want to stir frequently to prevent burning.

Then I add seasonings, ginger, garlic, and hoisin sauce, and mix well.

Pro Tips

  • Cook the ground beef and peppers together. This ensures the flavors blend well and reduces the number of pans you’ll need to wash.
  • Slice the cabbage thinly. Thinner slices will cook faster and give the dish that perfect crisp-tender texture.
  • Use fresh ginger and garlic if possible. Freshly grated ginger and garlic pack more flavor than powdered versions, making the dish even more delicious.
  • Adjust the heat to your liking. If you like things spicier, add extra crushed red pepper flakes for a bit more kick.
  • Make it ahead of time for meal prep. This Keto Egg Roll in a Bowl reheats well, making it perfect for easy lunches or dinners throughout the week.
  • Try it with different proteins. Ground beef works great, but you can easily swap it out for ground chicken, turkey, or even pork!

How to Serve Egg Roll in a Bowl

For a heartier meal, try serving it over white rice or alongside a simple veggie stir fry. You can also top it with sliced green onions, a drizzle of sriracha or sesame oil, or even sprinkle on extra sesame seeds for added crunch. For a bit of freshness, try adding a squeeze of lime or some chopped cilantro on top!

Storage

Store leftovers in an airtight container in the fridge for up to 4 days. Egg roll in a bowl reheats well. Reheat leftovers in the microwave or in a large skillet or wok.

Recipe Variations

  • Ground Meat: Swap out the ground beef for any protein you prefer. Try ground turkey, ground pork, or ground chicken.
  • Cooking Sauce: I use hoisin sauce because it is more flavorful than soy sauce but you can use it if that is what you have. You will need to add sugar if you are trying to replicate the flavor of hoisin sauce. (And if salt intake is a concern, opt for low-sodium soy sauce instead.) For a soy-free alternative, use coconut aminos.
  • More Flavor: Although no oil is necessary for this recipe, you can add a tablespoon of toasted sesame oil for a nutty taste that adds more depth.
  • Extra Veggies: Want more than shredded cabbage? Add green onions, bean sprouts, and broccoli slaw.
  • More Sauce: Once the egg roll bowl is ready, add a mouthwatering sauce. A drizzle of spicy mayo, hot sauce, duck sauce, or sweet chili sauce is the perfect finishing touch.

FAQ

Does an egg roll have eggs in it?

Traditionally, egg rolls do not contain eggs. However, the egg roll wrapper contains egg. I did not include eggs in this recipe but finishing this dish with a scrambled egg would be a tasty, protein-filled addition!

Can you freeze egg roll in a bowl?

Yes. Let it cool completely before transferring it to an airtight container or freezer-safe bag. When you’re ready to eat, thaw it overnight in the fridge and reheat on the stove for a quick meal that tastes just as good as fresh.

Is egg roll in a bowl healthy?

Yes. It’s low-carb, keto-friendly, and skips the fried wrapper found in traditional egg rolls. With nutrient-rich veggies like cabbage, carrots, and peppers, plus lean ground beef, it’s a balanced meal full of protein and fiber.
