Marry Me Chicken is known for its creamy Parmesan sauce flavored with garlic and sun-dried tomatoes. Marry Me Chicken Soup takes those same flavors and turns them into a cozy, spoonable meal! Here’s what you need to make it:

  • Rotisserie chicken: You’ll need about half of a rotisserie chicken. Remove the skin and shred the meat before adding it to the soup.
  • Carrots, celery, and onion: The classic combination that gives the soup a flavorful base.
  • Garlic: Fresh garlic adds even more savory flavor.

How to make Chicken and Gnocchi Soup

We’re adding shredded rotisserie chicken, carrots, celery, onions, garlic, sun-dried tomatoes, and potato gnocchi to a creamy Parmesan broth. The oil from the jar of sun-dried tomatoes is important too! Instead of letting all of that flavor go to waste, I use some of the seasoned oil along with butter to sauté the vegetables.

Here’s how you make it

Remove the skin from half of a rotisserie chicken and shred the meat.

Chop your carrots, celery, and onion, and mince the garlic.

Add the oil from the sundried tomatoes, and butter into a pot.

Sauté the vegetables until they begin to soften, add in the tomato paste.

Add in the seasonings, water, chicken, and sundried tomatoes.

Add in the potato gnocchi and heavy cream, stir to combine.

Simmer the marry me chicken and gnocchi soup on medium high for 3-5 minutes, then add in the chopped spinach and parmesan cheese. Top it with more grated parmesan cheese and fresh basil if desired.

Pro Tips for Chicken and Gnocchi Soup

Marry Me Chicken Soup with Gnocchi

This Marry Me Chicken Soup is creamy, cozy, and packed with tender chicken, pillowy gnocchi, sun-dried tomatoes, Parmesan cheese, and plenty of flavor. It has everything you love about classic Marry Me Chicken, turned into a hearty soup that comes together in one pot.

Ingredients
 

  • ½ Rotisserie chicken, skin removed and meat shredded
  • 1 tablespoon Butter
  • 1 tablespoon Oil from the sun-dried tomato jar
  • 2 medium Carrots, peeled and chopped
  • 2 stalks Celery , chopped
  • 1 small Yellow onion, diced
  • 3 cloves Garlic, minced
  • ½ cup Sun-dried tomatoes, drained and chopped
  • 2 tablespoons Tomato paste

Seasonings and Soup Base

  • 2 tablespoon Chicken bouillon seasoning, use this in place of chicken broth
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon Seasoned salt, or to taste
  • ½ teaspoon Black pepper
  • 5 cups water
  • 1 cup Heavy whipping cream
  • 1 16 ounce package Potato gnocchi
  • 2 cups Spinach, chopped
  • ½ cup Parmesan cheese, grated, plus more for serving
  • Fresh basil, chopped for garnish, (optional)

Instructions
 

  1. Remove the skin from half of a rotisserie chicken, then shred the meat into medium to large chunks (so it doesn't get too stringy when cooking), and set it aside.
  2. Heat a large Dutch oven or soup pot over medium heat. Add the butter and oil from the jar of sun-dried tomatoes into the pot and heat it up for 1-2 minutes.
  3. Add the chopped carrots, celery, and onion into the pot. Sauté for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.
  4. Now add the minced garlic in with the vegetables and cook for about 30 seconds, until fragrant. Stir continuously so that the garlic doesn't burn
  5. Gently add in the chopped sun-dried tomatoes and tomato paste. Cook for 1-2 minutes, stirring frequently.
  6. Season with the chicken bouillon seasoning, garlic powder, onion powder, Italian seasoning, seasoned salt, and black pepper. Stir everything together until well combined.
  7. Gently pour in 5 cups of water and add the shredded rotisserie chicken. Stir well and bring the soup to a gentle simmer. Simmer uncovered for about 10 minutes to allow the flavors to come together.
  8. Pour in the heavy cream and add the potato gnocchi. Stir to combine and continue simmering gently for 3-5 minutes, or until the gnocchi are tender and begin to float.
  9. Stir in the chopped spinach and simmer for another 1-2 minutes, just until the spinach is wilted. Reduce the heat to low and stir in the grated Parmesan cheese until melted and the broth is creamy. Add fresh chopped basil, if desired.
  10. Taste and adjust the seasonings as needed. Ladle the Marry Me Chicken Soup into bowls and top with additional grated Parmesan cheese and fresh basil. Serve immediately and enjoy!
