Remove the skin from half of a rotisserie chicken, then shred the meat into medium to large chunks (so it doesn't get too stringy when cooking), and set it aside.
Heat a large Dutch oven or soup pot over medium heat. Add the butter and oil from the jar of sun-dried tomatoes into the pot and heat it up for 1-2 minutes.
Add the chopped carrots, celery, and onion into the pot. Sauté for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.
Now add the minced garlic in with the vegetables and cook for about 30 seconds, until fragrant. Stir continuously so that the garlic doesn't burn
Gently add in the chopped sun-dried tomatoes and tomato paste. Cook for 1-2 minutes, stirring frequently.
Season with the chicken bouillon seasoning, garlic powder, onion powder, Italian seasoning, seasoned salt, and black pepper. Stir everything together until well combined.
Gently pour in 5 cups of water and add the shredded rotisserie chicken. Stir well and bring the soup to a gentle simmer. Simmer uncovered for about 10 minutes to allow the flavors to come together.
Pour in the heavy cream and add the potato gnocchi. Stir to combine and continue simmering gently for 3-5 minutes, or until the gnocchi are tender and begin to float.
Stir in the chopped spinach and simmer for another 1-2 minutes, just until the spinach is wilted. Reduce the heat to low and stir in the grated Parmesan cheese until melted and the broth is creamy. Add fresh chopped basil, if desired.
Taste and adjust the seasonings as needed. Ladle the Marry Me Chicken Soup into bowls and top with additional grated Parmesan cheese and fresh basil. Serve immediately and enjoy!
