What are Egg Rolls?
Egg rolls are a deep-fried Chinese appetizer. The savory rolls usually contain shredded cabbage, and finely chopped meat wrapped in a wheat flour skin. However, there are many egg roll variations, hence this recipe.
Avocado Egg Rolls Ingredients:
- Vegetable oil: Use this to fry the egg rolls. I do not recommend using olive oil but any neutral-flavored oil with a high smoke point will work.
- Avocados: Use ripe avocados.
- Sun-dried tomatoes: They should be diced and drained before they are added to the mixture. Sub them with Roma tomatoes if desired.
- Red onion: Mince them finely so you can taste them without it affecting the texture.
- Cilantro: Chop it finely.
- Seasoning: I keep it simple with salt and black pepper.
- Egg roll wrappers: Find them in the freezer section at the grocery store. You can also use wonton wrappers as a substitute.
How to Tell if an Avocado is Ripe
This avocado egg rolls recipe requires perfectly ripe avocados. You can determine if an avocado is ripe using the following factors:
- Exterior Color: Dark green to nearly black avocados tend to be ripe whereas bright green avocados are usually not ripe yet.
- Feel: Gently squeeze the avocado. It should not be firm but on the softer side. However, if it feels mushy, the avocado is overly ripe and past its prime.
- Smell: Overly ripe avocados tend to have a rancid smell. Throw them out.
- Flesh: Ripe avocado flesh is bright green. If the inside of the avocado is yellow, they are not ready. Alternatively, if it has brown spots, it is either bruised or too ripe.
Instructions to Make Avocado Egg Rolls:
Prepare the Ingredients
Heat up vegetable oil in a deep fryer or cast iron skillet until it reaches 350°F.
Remove the skin from the avocados and place them in a medium bowl. Use a fork to slightly break up the avocados, but leave them in big chunks.
Cut the sun-dried tomatoes into bite-size pieces, and add them to the bowl with the avocados. Now add the diced onions into the bowl as well.
Sprinkle in the chopped cilantro, salt and pepper. Use a spoon to gently fold everything together (try not to completely mash the avocados).
Assemble Egg Rolls
Lay one egg roll wrapper on a flat surface, spoon in about 2 tablespoons of the avocado mixture on one edge of the wrapper.
Fold the edge directly over the mixture. Now bring in the sides of the wrapper, and continue rolling towards the opposite edge of the wrapper until it is time to seal it.
Dampen your fingers with some water, and rub them along the open end of the egg roll wrapper to create a sort of “glue.” Close the wrapper all the way and press slightly press the end into the egg roll so that it is sealed close.
Repeat these steps until all of your egg rolls have been made.
Fry Avocado Egg Rolls
Place the egg rolls into the hot oil one at a time, careful not to over crowd the skillet or deep fryer. Fry the egg rolls for about 3 minutes, flip them over and fry for an additional 3-5 minutes.
Remove them from the hot oil once they are golden brown. Place them on a cooling rack or a bed of paper towels to drain the excess grease.
Alternatives and Variations:
- Chicken Avocado Egg Rolls: If you want to turn this into a hearty meal, consider adding diced, boneless cooked chicken. This would make the recipe similar to the CPK (California Pizza Kitchen) avocado egg roll recipe.
- Add Cheese: For a tangy twist to this savory treat, try adding cream cheese to the avocado mixture, like BJ's avocado egg rolls.
- Air Fryer Avocado Egg Rolls: Instead of deep frying, you could save some oil and calories by air frying the rolls. Spray the basket or tray with some oil then place the assembled egg rolls in a preheated air fryer at 400°F for about 6 minutes.
