I love the convenience of sheet pan meals and this trio of veggies, sausage, and potatoes is an easy go-to! Whether you're feeding the family or doing meal prep, this is a quick, healthy option. Bonus points for using just one pan and having nearly no mess thanks to parchment paper!

Ingredients

You'll love the versatility of sheet pan sausage and potatoes. The combination of red potatoes, broccoli, zucchini, yellow squash, and smoked sausage offers a variety of flavors, colors, and textures.

Cajun seasoning adds a warm, spicy kick to tie it all together. For an indulgent finish, add some cheese.

How to Make Sheet Pan Sausage and Veggies

Preheat your oven to 350 degrees F. Then line a sheet pan with parchment paper and set it aside.

Add cubed potatoes to a large bowl along with the olive oil and cajun seasoning.

Mix the potatoes with the oil and seasoning until they are evenly coated.

Once the oven is preheated, pour the seasoned potatoes onto the parchment lined sheet pan, making sure they are in one even layer. Bake them for 10 minutes.

While the potatoes bake, begin cutting up your vegetables and sausages. Wash the vegetables thoroughly. Then cut the broccoli into bite-size pieces. Next, cut the zucchini and squash into ¼ slices, or you can cube them. Set them aside.

Now slice your smoked sausage links into ½ coin slices, or to your desired size thickness. After the potatoes have cooked for 10 minutes, they should be just about fork tender. Remove them from the oven.

Use a spatula and flip the potatoes over. Now pour your vegetables and sliced sausages directly onto the sheet pan. Add some additional seasoning to the veggies and sausage if desired. Place the pan back into the oven and bake for another 15-20 minutes.

Remove the sheet pan from the oven and turn the heat off.  Serve immediately, or top the sausage and veggies with cheddar cheese if desired.

Place it back in the oven until the cheese is melted (about 2-3 minutes).

Serve right away, and enjoy!

Hint: The potatoes take longer to cook than the other vegetables. Bake them alone for about 10-15 minutes before tossing in the precooked sausage and other veggies.

Substitutions & Variations

  • Cheese - Instead of cheese slices, try freshly grated parmesan cheese.
  • Veggies - Swap any of the vegetables for your favorite veggies. Try fresh cauliflower, asparagus, bell peppers, green beans, cherry tomatoes, or Brussels sprouts.
  • Sausage - Use any variety of smoked sausages you like. Try andouille sausage, Polish sausage (kielbasa), pork, turkey, or chicken sausage.
  • Potatoes - Instead of red potatoes, try Yukon gold potatoes (baby potatoes), or for more nutrients, use sweet potatoes.
  • Seasoning - Swap the cajun seasoning for Italian seasoning or red pepper flakes.

Equipment

By now you've probably guessed what you need: a large sheet pan! The veggies, sausage, and potatoes need space to roast properly. If you don't have a large sheet pan, use two smaller pans instead.

Use parchment paper to line the baking sheet to make cleaning up a breeze. I prefer it over aluminum foil because the food is less likely to stick to the surface.

Storage

Once the sheet pan sausage and veggies have cooled to room temperature, transfer them to an airtight container. They'll last in the fridge for up to 4 days.

I don't like to freeze potatoes because it alters the texture and becomes grainy. To reheat, microwave, air fry, or add them to a preheated oven for about 10 minutes at 350°F.

Top tip

Place all the ingredients in a single layer on the sheet pan for even cooking. This is also why it's important to use a large baking sheet. It prevents overcrowding and ensures that everything roasts evenly without steaming or becoming soggy.

What vegetables go well with sausages?

Pair sausage with peppers, onions, or mushrooms. The savory flavor also pairs well with tomatoes, squash, or cruciferous vegetables like broccoli.

Is Polish sausage the same as Italian sausage?

Polish sausage is a blend of seasoned pork and beef. Italian sausage is usually made with pork and contains fennel seeds, herbs, and spices.

Is any sausage healthy?

Sausage can be a healthy protein option. However, some contain filler ingredients, additives, and high sodium levels. Opting for varieties with lean cuts of meat, minimal additives, and lower sodium content can make sausage a healthier protein option.
