Sheet Pan Sausage and Veggies

Sheet Pan Sausage and Veggies is an easy one-pan meal of smoked sausage, fresh veggies, and tender potatoes. This nutritious dinner is ready in 30 minutes with little to no cleanup!

Ingredients

  • 4 Red potatoes cubed
  • 1 tablespoon Olive oil
  • 1 tablespoon Cajun seasoning
  • 1 head Brocolli
  • 1 Zucchini
  • 1 Yellow Squash
  • 2 ropes Smoked sausage
  • Sliced or shredded cheese optional

Instructions

  • Preheat your oven to 350 degrees F. Then line a sheet pan with parchment paper and set it aside. Now, add the cubed potatoes to a large bowl along with the olive oil and cajun seasoning. Mix the potatoes with the oil and seasoning until they are evenly coated. 
  • Once the oven is preheated, pour the seasoned potatoes out onto the parchment lined sheet pan, make sure they are in one even layer. Place them in the oven and allow them to bake for 10 minutes. 
  • While the potatoes are baking, begin cutting up your vegetables and sausages. Wash your vegetables thoroughly. Now cut the broccoli into bite size pieces. Next, cut the zucchini and squash into ¼ slices, or you can cube them. Set them aside.
  • Now slice your smoked sausage into ½ coin slices, or to your desired size thickness. After the potatoes have cooked for 10 minutes, they should be just about fork tender. Remove them from the oven. 
  • Use a spatula and flip the potatoes over. Now pour your vegetables and sliced sausages directly onto the sheet pan. Add some additional seasoning onto the veggies and sausage if desired. Place the pan back into the oven and bake for an additional 15-20 minutes. 
  • Remove the sheet pan from the oven and turn the heat off.  Serve right away, or Top the sausage and veggies with cheddar cheese if desired and place it back in the oven until the cheese is melted (about 2-3 minutes). 
  • Serve right away, and enjoy!
