How to Make Chicken Alfredo Lasagna
Preheat the oven to 350ºF and cook the lasagna noodles according to the package instructions until al dente (about 10 minutes). Drain the noodles and set them to the side.
While the noodles are cooking, season the chicken liberally.
Cook Chicken
Add olive oil to a large skillet and heat it over medium high heat for about 2 minutes. Gently place the seasoned chicken into the skillet and sear on each side for about 7 minutes, or until cooked through.
Once the chicken is cooked, remove it from the skillet and place it on a cutting board or in a bowl to rest while you prepare the alfredo sauce.
Prepare Alfredo Sauce
Add the butter to the same skillet you cooked the chicken in. Once the butter melts, add the diced onions and saute for about 2 minutes so they can soften up. Then add the minced garlic and saute it for about one minute- stirring continuously so it does not burn.
Once the onion and garlic are softened, gradually add the heavy cream into the skillet and stir it in with the garlic. Then add the parmesan cheese and mix it into the cream until it is melted. Sprinkle in your seasonings.
Remove the alfredo sauce from the stove and set it aside.
Use a sharp knife to chop your chicken into small bite size pieces. Spray a 13x9 baking dish or casserole dish with cooking spray.
Assemble Chicken Alfredo Lasagna
Add a thin layer of alfredo sauce to the bottom of the dish, then lay 3 cooked lasagna noodles over the sauce in one single layer. Then scoop about 1 tablespoon of the ricotta cheese over each noodle and spread the ricotta mixture out into one even layer.
Add a handful of your chopped chicken and spread it out evenly.
Then top it with some of the shredded mozzarella cheese.
Continue by adding another layer of lasagna noodles, top with some of the alfredo sauce, and the same layers as mentioned above. On the final layer, top with a heavy serving of mozzarella and parmesan cheese.
Cover the dish with aluminum foil and place it in the oven and bake for 30 minutes. Uncover and bake for an additional 10 minutes, or place it under the broiler for 5 minutes.
Let the lasagna rest for at least 5-7 minutes before serving; and enjoy!
Hint: Use oven-ready lasagna to save some time.
Substitutions & Variations
- Meat - Save some time by using rotisserie chicken instead of cooking chicken breasts on the stovetop. Pancetta is a tasty option too.
- Cheese - Swap any of the cheeses for Monterey jack cheese or asiago. Try cream cheese as a substitute for ricotta cheese or cottage cheese.
- Fresh Herbs - You can use basil instead of parsley.
- Veggies - This chicken alfredo lasagna without spinach tastes amazing but you can always add some vegetables if you prefer. Add spinach or zucchini to the cheese sauce for extra nutrients.
- Seasoning - Add Italian seasoning to the spice mix for more herbaceous flavor.
Equipment
You will need a large pot to boil the lasagna noodles. Prepare the chicken and alfredo sauce in a large skillet.
Use a cutting board to dice the aromatics and cooked chicken. Use a 13x9 casserole dish to contain and cook the chicken alfredo lasagna.
Storage
Store leftover lasagna in an airtight container in the fridge for up to 5 days. Reheat individual servings in the microwave.
How to Freeze Chicken Alfredo Lasagna
You can assemble this chicken alfredo lasagna recipe in advance and bake it later. Assemble the white lasagna as detailed in the instructions. Then cover the dish with plastic wrap, followed by another layer of aluminum foil.
Store it in the freezer for up to 3 months. (It's best to use a disposable aluminum dish when keeping chicken alfredo lasagna frozen.) Thaw it overnight in the fridge.
Remove the plastic wrap and foil before baking, then cover the dish with a new piece of foil. Let it sit at room temperature for about 20 minutes while the oven reheats. Finally, bake the lasagna in the oven as instructed. You may need to add 10 minutes to the cooking time.
Top Tip
Master the technique of layering. This ensures the ingredients are evenly distributed so you get sauce, pasta, and chicken in every bite. Start with a thin layer of alfredo sauce at the bottom of the dish to prevent sticking, then alternate between noodles, cheese, chicken, and sauce.
