Ground Beef and Vegetable Soup Recipe

Get into this Hearty Beef and Vegetable soup made with potatoes, frozen vegetables, and seasoned to perfection. It is a budget friendly and easy and delicious dinner idea or make-ahead meal prep!

Ingredients
 

  • 1 pound Ground beef, season with 1/2 tablespoon seasoned salt
  • 1/2 cup Onion, chopped
  • 2 medium Russet potatoes, peeled and cubed
  • 1 bag Frozen mixed vegetables
  • 1 jar Pasta sauce, spaghetti sauce of choice

Seasonings

  • 1 tablespoon Beef bouillon, mix with 1 jar of water
  • 1/2 tablespoon Seasoned salt, adjust to taste
  • 1 tabespoon Sugar, optional but recommended
  • 1/2 tablespoon Italian seasoning
  • 2 teaspoons Garlic powder
  • 2 teaspoons Onion powder
  • 1 teaspoon Red pepper flakes, optional but recommended
  • Salt and pepper to taste

Instructions
 

  1. Brown the ground beef in a large pot over medium high heat. Drain any excess grease. Season the meat with seasoned salt and add the diced onions to the pot.
  2. Stir the diced onions and seasoning around with the meat and cook until the onions begin to soften, about 2-3 minutes. Be sure to stir constantly.
  3. Lower the heat to medium-low. Now add the diced potatoes and frozen vegetables into the pot. Gently pour in the jar of pasta sauce and stir to combine.
  4. Fill the jar up with water and add the beef bouillon seasoning to it. Place the lid on and shake it up until fully combined. Pour the water into the pot and stir. If you want it really soupy, add one more jar of water.
  5. Now add in all of your additional seasonings, and stir until they are mixed in well.
  6. Place the lid on and simmer for about 10-15 minutes, be sure to stir periodically so that nothing sticks to the bottom.
  7. The potatoes will absorb a lot of the water, so you may need to add more to get your desired consistency. Taste the soup and add salt and pepper to add flavor.
  8. Serve as is or with warm cornbread, rice, or pasta. And enjoy!
