This take on Olive Garden's fried lasagna is the perfect way to use up any leftovers. Fried lasagna creates the ultimate appetizer, or meal for any day of the week.
How many people LOVE lasagna as much as my family does!? Lasagna is pretty much an amazing dish already, but let's be honest with each other- the best piece is the one in the corner, with the crunchy (almost burnt like) pasta, thick tomato sauce and extra cheesy exterior! Not all pieces are alike though, and funny enough, the middle pieces tend to be the ones left in the pan by the time my family is done with it.
My family is large- which you may or may not know by now; so it's a miraculous thing to have food leftover after dinnertime! After all of the hard work you put into making lasagna, it's a shame to have it go to waste. So this creation came about for 2 reasons:
- I DID NOT want to waste the leftover lasagna
- If you've ever tried the Lasagna Fritta at Olive Garden, you would understand how delicious and addicting they are!
So voila- fried lasagna was born! It is truly something special because you get all of the goodness of the lasagna, except now it's all toasty and crispy! Serve it with this homemade marinara sauce and some ranch dressing. Your family (and your belly) will love you forever!
It's super easy and quick to make (considering the lasagna is already prepared).
Here's how it's made:
Heat oil in a cast iron skillet over medium heat
Whisk eggs in a large bowl. In a separate bowl, add flour, bread crumbs, and seasoning.
Cut leftover lasagna into strips (easier to manage if lasagna is cold). Dip in dry mix, then egg mixture, and back in dry mix (use a spoon or fork to help coat the lasagna pieces)
Fry for 5 minutes per side to achieve nice golden brown crust.
Serve with homemade marinara and/or ranch dressing.

- 4 pieces Leftover lasagna
- 3 Eggs
- 2 cups Flour
- 1 cup Breadcrumbs
- 2 cups Vegetable oil
Seasoning (to taste)
- 1 tablespoon Garlic powder
- 1 tablespoon Italian seasoning
