1. Preheat your cast iron skillet over medium-high heat.
2. Add 1 tablespoon of avocado oil or olive oil to the skillet and heat it until simmering (about 30 seconds to 1 minute).
3. Add your cleaned and cubed potatoes into the skillet and sprinkle with seasoned salt. Use a spatula to toss them in the skillet to distribute the seasoning evenly. Let them cook for 3-5 minutes, then flip them over and cook an additional 3-5 minutes.
4. Remove the potatoes from the skillet and set them aside in a bowl.
5. If your steaks are not already marinated , season them steaks generously with salt and pepper on both sides. Add the remaining olive oil or avocado oil into the skillet over medium high heat. 6. Place the steaks in the skillet and cook for about 4-5 minutes per side for medium-rare steak, or adjust the cooking time based on your preferred doneness. Once cooked to your liking, remove the steaks from the skillet and set aside to rest.
7. While the steaks are resting, reduce the heat to medium-low and add the butter, minced garlic, and dried thyme to the skillet. Cook for an additional 1-2 minutes until fragrant, stirring constantly to prevent burning.
6. Add the potatoes back into the skillet and stir them into the butter sauce, then move them to one side of the skillet.
7. Slice the steaks against the grain into thin pieces. Add the steak back into the skillet and toss them in the sauce to coat. Serve while hot, and enjoy!
