Hearty Vegetable Stew
Hearty vegetable stew is the perfect comfort food for any night. Full of wholesome vegetables, seasoned well, and bathed in a delicious tomato based stew.

2 medium Potatoes peeled and diced 1 Zucchini diced 1 yellow Squash diced 1/2 medium Onion diced 2 whole Carrots peeled and sliced 2 stalks Celery siced 1 cup Frozen mixed vegetables 1 can Crushed tomatoes 2 cups Water 2 tablespoons Olive oil
Place pressure cooker on sauté mode. Add olive oil and allow to heat up (about one minute).
Add all of the vegetables, sauté for about 5 minutes, stirring continuously. Add all of the seasoning and mix well.
Add crushed tomatoes and water. Mix well.
Place lid on pressure cooker, set it to soup mode (30 minutes).
If you do not own a pressure cooker, follow al steps in a large stock pot on medium heat.
Simmer until veggies are tender.
