Hearty vegetable stew is the perfect comfort food for any night. Full of wholesome vegetables, seasoned well, and bathed in a delicious tomato based stew.
Fall calls for all things comfort right!? This hearty vegetable stew fits that bill beautifully. It was adapted from Martha Stewart's recipe. Of course I took to Pinterest when I had a taste for a stew! Jam packed with vegetables, and bathed in a savory broth makes this the ultimate bowl of comfort. Even more, it is SUPER simple to make!
What if I am not a vegetarian?
Every now and then, omitting meat from our diet is a great idea! No scientific evidence will be included in this post (this time), but just take my word for it! Moreover, the meat will not be missed with this stew. There are so many amazing flavors from the seasonings and spices. Add a side of crackers, or toasty bread, and you will be stuffed!
Can I make this without a pressure cooker?
Using a pressure cooker ensures that this stew is done in under an hour. However, if a pressure cooker is not owned, follow the exact same instructions in a stock-pot on the stove. Set the stove to medium heat, and simmer for one to two hours.
How is the hearty vegetable stew made:
Start with prepping your vegetables. The important part is that they are all diced or chopped in bite size pieces. Place your pressure cooker on saute mode.
Add the olive oil into the pressure cooker, add the vegetables. Saute the vegetables for about 5 minutes, stirring continuously. Season the vegetables liberally, and mix well.
Pour the crushed tomato sauce, and water into the pot. Stir well. Place the lid onto the pressure cooker and set to "soup or stew" mode. Cook until time runs out.
Enjoy this stew with a yummy grill cheese sandwich, corn bread, or even crackers!

Ingredients
- 2 medium Potatoes peeled and diced
- 1 Zucchini diced
- 1 yellow Squash diced
- ½ medium Onion diced
- 2 whole Carrots peeled and sliced
- 2 stalks Celery siced
- 1 cup Frozen mixed vegetables
- 1 can Crushed tomatoes
- 2 cups Water
- 2 tablespoons Olive oil
Seasoning (to taste)
- 1 tablespoons Italian seasoning
- 2 tablespoons Seasoning salt
- 2 teaspoon Black pepper
- 1 teaspoon Garlic powder
- 1 teaspoon Onion powder
- ½ teaspoon Crushed red pepper
Instructions
- Place pressure cooker on sauté mode. Add olive oil and allow to heat up (about one minute).
- Add all of the vegetables, sauté for about 5 minutes, stirring continuously. Add all of the seasoning and mix well.
- Add crushed tomatoes and water. Mix well.
- Place lid on pressure cooker, set it to soup mode (30 minutes).

We are not vegetarian but my daughter goes through days when she's not in the mood for meat so we cook vegetarian meals. This hearty soup is perfect for us and I'd even be able to pack some for her school lunch in a thermos.
