Chicken Lime and Avocado Soup

Juicy and tender pieces of chicken, succulent chunks of avocado, and toasted vermicelli noodles are all swimming in a zesty and flavorful lime based broth. This soup is a delicious way to wrap yourself in comfort any time of the year.

Ingredients

  • 2 Chicken breasts cooked and chopped
  • 1 cup Chicken broth
  • 2 cups Water
  • 1 medium Onion sliced thin
  • 2 Limes juiced
  • 1 tablespoon Olive oil
  • 1 1/2 cup Vermicelli noodles
  • 1 whole Avocado cubed
  • 1/2 cup Cilantro chopped (garnishment)

Seasoning (to taste)

Instructions

  • Place the chicken in a stock pot and add the water and the chicken broth. Next add all of the seasonings: tomato bouillon, garlic powder, onion powder, black pepper, and bay leaves. Let that simmer for 25 minutes so the chicken can cook through.
  • While the chicken is cooking, add the olive oil to a skillet over medium-high heat. Add the vermicelli noodles and toast for 5-7 minutes or until golden brown.
  • Stir them frequently so they do not burn. Once they are a golden brown, toasted color, remove them from the skillet and set them aside.
  • Once the chicken is cooked through, remove it from the stock pot (reserving the liquid), and place it on a cutting board. Cut the chicken into bite-size pieces.
  • Add the onions and chicken back into the pot. Add the juice of the two limes directly into the pot. Add one more tablespoon of the Knorr tomato bouillon (optional, season to taste).
  • Spoon into bowls, add the cubed avocados while hot, and add a sprinkle of cilantro. Serve with tostadas or tortilla chips.

Notes

Noodles may expand and start absorbing the liquid. Add more water as desired.
