Preheat oven to 375°F. Lightly grease a 9x13 baking dish or large sheet pan that has a lip on it to hold the liquids.
In a small bowl or in the baking dish whisk together the red curry paste, coconut milk, soy sauce, minced garlic, and sesame oil. If it is too thick, add 1-2 tablespoons of water.
Once the sauce is fully combined, add your spinach and mix it in with the suce. Now add your frozen dumplings in one even layer.
Cover tightly with foil and bake for 15-20 minutes.
Remove foil, increase heat to 400°F, and bake another 5-10 minutes until the tops of dumplings are golden and slightly crispy.
Garnish with sesame seeds, sliced green onions and drizzle with chili oil or sriracha, if desired. Serve hot, and enjoy!
