Garlic Parmesan Roasted Purple Potatoes

Purple potatoes are sliced and seasoned with butter, garlic, and parmesan then roasted to crisp perfection. Brighten up your meal with this tasty, nutritious side dish for dinner.

Ingredients

  • 1 pound Purple potatoes
  • 1 tablespoon Olive oil
  • ½ tablespoon Seasoned salt
  • 2 teaspoons Garlic powder
  • 2 teaspoons Onion powder
  • 1 teaspoon Black pepper
  • 1 cup Parmesan cheese shredded or grated
  • 4 cloves Garlic minced
  • 2 tablespoons Butter melted

Instructions

  • Preheat the oven to 375°. Spray a 9x13 baking dish with nonstick cooking spray. 
  • Cut your potatoes in half lengthwise. Place them in a large bowl. Drizzle the olive oil over the potatoes. Add all of the seasonings including the seasoned salt, garlic powder, onion powder, and black pepper. 
  • Stir the potatoes around with the seasonings and olive oil to make sure they are all evenly coated.  
  • Add the parmesan cheese and minced garlic into a separate bowl, and pour the melted butter over it. Mix this up with a spoon. It should form a thick paste like consistency. 
  • Spread the parmesan garlic mixture into the bottom of the baking dish in one even layer. Firmly press the flat side of the potatoes into the cheese mixture in the dish. 
  • Place the baking dish in the oven and roast the potatoes for 30 minutes. The cheese should be golden brown and slightly hardened. 
  • Use a spatula to remove the potatoes from the dish, ensuring to get it under the cheese so it is coating the potato. Serve immediately and enjoy!
