Ingredients

  • 2 pounds Ground beef 80/20 mix is best
  • 1 cup Ritz crackers crushed
  • 1/4 cup Milk
  • 1 large Egg
  • 1 tablespoon Worcestershire sauce
  • 1/2 Bell pepper diced
  • 1/2 Yellow onion diced
  • 1 pack Lipton onion soup mix
  • 1 tablespoon Seasoned salt use less if watching sodium intake
  • 2 teaspoons Garlic powder
  • 1 teaspoon Black pepper

Glaze for Meatloaf

  • 1/4 cup Ketchup
  • 1/4 cup BBQ sauce
  • 2 tablespoons Brown sugar

Instructions

  • Preheat your oven to 350°F. Lightly grease a loaf pan or line it with parchment paper and set it aside
  • In a large mixing bowl, combine ground beef, Lipton French Onion Soup Mix, crushed crackers, egg, milk, Worcestershire sauce, diced bell pepper and onion, seasoned salt, garlic powder, and black pepper.
  • Mix the meat mixture gently with clean hands or a spoon until just combined. (do not overmix it). Transfer the mixture to the prepared loaf pan and press lightly into an even log shape.
  • Place the meatloaf in the oven and cook uncovered for 45 minutes. While the meatloaf is cooking, mix the ketchup, bbq sauce, and brown sugar in a bowl and set it aside.
  • After 45 minutes, remove it from the oven and drain any excess grease that accumulated in the dish. Spread the glaze evenly over the top of the meatloaf. Place it back in the oven and bake for an additional 45 minutes, or until the internal temperature reaches 160°F.
  • Let the meatloaf rest for 5-10 minutes before slicing. This keeps it juicy and easy to cut. And enjoy!
