After frequenting BJ's so many times, it became clear that I must remake this amazing dessert at home. So, the copycat BJ's pizookie recipe was born. If you have never had this exact version, there are several restaurants that sale different variations.
Pretty much every night after dinner, the kids are immediately asking for a snack. How baffling is it that they are "full" and can not finish what we had for dinner, but they're instantly hungry enough to ask for a snack!? Being honest though, this dessert is SO easy to make, so I'm usually obliged to whip it up real quick. Get your favorite premade cookie dough, get some ice cream, and BOOM! I promise, it's really that easy!
Let's make the copycat BJ's Pizookie recipe:
- Preheat oven according to the instructions on the package of cookies. For this particular recipe, I used the Reese's peanut butter cookie dough.
- Spray a small cast iron skillet, or shallow pie dish with non-stick cooking spray.
- Place the cookie dough into the dish and spread out with hands by pressing the dough and spreading into a flat even layer to cover the entire dish.
- Place into the oven and cook for 10-15 minutes (time will vary depending on oven settings).
- Cookie dough will puff up as it cooks, so once removed from the oven, use a spoon to flatten the center of the dough to give it a pie shell like appearance.
- Let the cookie cool a bit, and serve with a scoop of your favorite ice cream!

- 2-4 Scoops Ice cream
- Nonstick cooking spray
Instructions
- Preheat oven according to the instructions on the package of cookie.
- Spray a cast iron skillet, or shallow pie dish with non-stick cooking spray.
- Place the cookie dough into the dish and spread out with hands by pressing the dough and spreading into a flat even layer to cover the entire dish.
- Place into the oven and cook for 7-10 minutes.
- Cookie dough will puff up as it cooks, so once removed from the oven, use a spoon to flatten the center of the dough to give it a pie shell like appearance.
- Let the cookie cool a bit, and serve with a scoop of your favorite ice cream.
Notes
This recipe would be delicious with homemade cookie dough as well.
Let the cookie cool down for 5 minutes prior to putting ice cream scoop on it or else it will completely melt!
