Whole grain bread, loaded with kiwi fruit, strawberries, and a vanilla honey infused yogurt. This peanut butter fruit toast is a true explosion of flavors. The tartness from the kiwi fruit is cut by the sweet-saltiness of the peanut butter. To add even more flavor to the toast, infuse vanilla yogurt with honey and drizzle it over the top of the toast.
Most people say breakfast is the most important meal of the day. Often times we find ourselves skipping it due to lack of time, or simply not being hungry early in the morning. This peanut butter fruit toast is hearty enough to sustain your hunger well into lunch time. Mix up the flavors by adding different fruits, or maybe even a different flavored yogurt. Even more, switch out the peanut butter with your favorite nut butter (especially if allergies are involved). There are so many alternatives to peanut butter now-a-day: almond butter, sunflower butter, cashew butter, just to name a few.
How to assemble the toast:
Toast the whole grain bread until the desired crispness is achieved.
Spread the peanut butter on each slice of bread. It is best to start with the peanut butter (or nut butter) first because it acts as a “glue” of sorts. Next add some of the yogurt mixture on top of the peanut butter.
Begin layering your fruit over the peanut butter and yogurt. Once the fruits are layered, drizzle with some honey to round out the flavors, and ENJOY!
- 2 slices Whole grain bread
- 2 Kiwi fruits, sliced
- 1/4 cup Dried strawberries
- 1/4 cup Vanilla yogurt
- 2 tablespoons Peanut butter
- 1 tablespoon Honey
- Toast the bread to desired doneness. Smear the peanut butter on each slice of toast.
- Add half of the yogurt to each slice of bread, on top of the peanut butter.
- Then layer your fruits accordingly. Drizzle with the honey to complete the toast.
Substitute the peanut butter for any nut butter, or omit completely if desired.
